High Sugar Squash

High sugar squash are a development of the C. pepo Sweet Dumpling type having higher sugar levels than standard varieties. They mostly have very attractive flesh colours and in US markets these are proving a very popular choice with the consumer. Normal squash average a Brix (sugar level) reading of approx. 6-10% where as high sugar types tend to average 15%
