Heritage celery varieties have a blanched (whitened) lower stem. They are traditionally grown by digging a trench and pulling the soil up around the plant (without touching the stem) as it grows.
Varieties to be planted out in rows or "beds" - generally pale-green varieties are more popular in Europe whilst darker green types are usually preferred in the US.
Self-blanching varieties tend to be more common than the traditional trenching types since self-blanching occurs naturally by foliage cover without the extra costs of trenching and subsequent cleaning.
A. fistulosum types usually have a hotter, drier flavour than A. cepa types, and can also tend to be stringy, if really mature.
